My advice it to stay heavily involved with this build and ask for and expect updates. Get a timetable of expected progress and costs. Pick a place you can easily get to and drop in regularly. If you don't, it will get done 'as time permits' and cost over runs spiral out of control and things get lost. I doubt you will find a place that does the transmission without sending it out. You could do that yourself. My guess is that the head will also be sent away for work and the shop just tears down and assembles everything. Ask where the work is done and ask to see it. Ask to talk to other Datsun owners that had work done there. This shouldn't be a problem for a good shop. A good shop will probably have a long waiting list.
