12 circuit wiring harness install, where to start?

I need to pass a brake and lamp inspection to get my 510 some new plates after a salvage recovery.  At first, I tried to do some band aid work to the harness only to find it was in way worse condition than I anticipated. So, I picked up a speedway motors 12 circuit mini fuse harness, I have done a few 80s japanese motorcycles and comparatively the 510 seems more on the simple side of things considering it doesnt employ 18 different unnecessary safety system relays using one ground....

 

Past labeling everything as I disconnect it, and removing it without breaking anything so I can use it for reference, does anyone have any pointers?  I had already personally installed a matchbox, IR alternator, external headlight relays, as well as modern high beam relay, everything else is stock.

 

I will be getting some stuff from vintage connections, as well as replacing some redundant connectors with solder and shrink wrap.  Time is of no importance since I retired the car from daily duty after getting rear ended for the 3rd time in as many years.  

 

ANY pointers are greatly appreciated. I want to do this right the first time. Probably going to start labeling and removing the harness today.

I think your off to the right start, pics labels and diagrams will be your best friend.... also a large table to put the whole harness on helps....

Set it up like it runs in the car on the table and you can get the newer harness to lay parallel, then add and delete as you wish.....

You can even test the harness on the table before you install it, atleast most of the main circuits...
