Can I make the disc brakes off of an 83 720 work on my 75 620? And if so what will I have to do to make it work?

Anything can be done with a wire feed wrench but basically not do-able.

Type 'disc brake conversion on 620 truck' into the Ratsun  search engine or type it into Google and add Ratsun at the end... and start reading. This is a well documented up grade so no need for anyone to write 5 pages of options for you.

brackets that bolt onto your kingpin spindles, or something like that

I bought control arms from beebani that require conversion to coilovers but are made to use ball joint spindles with disc brakes

PM here on Ratsun to contact him
