And in reality, an enchilada is a taquito, rolled, like they really are made traditionally, with salsa and cheese. And yeah, we have that horrible burden of being close to Tijuana, aka Mexico, and thus we are infested with Mexican food around here made by folks who's primary language is spanish. And to add to the horror, my parents are from mexico and I grew up between San Diego and Tijuana. So please, feel free to educate me on Mexican, not Texano, cuisine.
