If I put a 280ZX 5 speed on a L20b, which clutch parts (pressure plate, disk, bearing, slave cylinder, and master cylinder) should I use?

Hall Monitor is spot on.  What ever was in your current tranny goes into the Z tranny.  The TO Brg collar etc is clutch PP height dictated not tranny dictated.

The above is correct. Just remember that the transmission has absolutely nothing what ever to do with the clutch. The clutch has nothing to do with the transmission. You can run whatever transmission will fit your engine. The pressure plate, clutch disc and release bearing and collar are separate and a matched set. Keep them together.... well, always get and put a new bearing on the collar.
