Pedal issues

I'm trying to get my Datsun 620 in a drivable condition and i've been having some issues with the brakes. When I have the motor running and press on the brakes, the engine dies a little. I thought there was something wrong with the vacuum in the brake booster, so I disabled the vacuum valve temporarily to test if the brakes would turn off the engine. Turns out the valve inside the brake booster was sending air to the motor and turning it off, so that problem was fixed, although the brake pedal was slightly heavier to push. While testing out the brakes, I decided to test out the gas pedal as well. Doing so, the  motor turned off. I'm unsure if too much air is coming through the carburetor, or something was wrong in the fuel pump. I need some help on what the issue is and how to repair it.

Technically not using the brake booster. The vacuum valve attached to the brake booster was removed and plugged. The brake booster does not use vacuum from the engine anymore. After fixing the brake issue, I stumbled upon a gas pedal issue. The engine dies when I step on the gas from idle.

The brake issue isn't fixed. You've disconnected the booster so braking is less now. Possibly the hose between the one way valve and the booster is cracked. I'd find the problem and replace what needs replacing.

Engine dying when you step on gas could be the accelerator pump not working. With engine OFF look down the carb with air filter off and pump the gas. You should see a strong squirt of fuel into the primary barrel.
